Tasty Tuesday

I got a lot of requests for the delicious pumpkin bread that I posted on Thanksgiving so here is the recipe:

3 1/2 cups all-purpose pre-sifted flour


2 tsp baking soda

1 1/2 tsp salt

1 tsp cinnamon

2 1/2 cups sugar

1 cup white raisins

1/2 cup chopped walnuts

1 cup canola oil

4 eggs

1/3 cup water

1 can pumpkin

Mix all ingredients together with an electric mixer. Don’t over-mix or the batter will become too thick. Grease four coffee cans and fill 1/2 way with the mixture. Bake at 350° for 30-45 minutes. After 35 minutes, stick a knife in the middle of the bread. If it comes out clean, it is done. Cool for 20 minutes before releasing from the can. If you don’t have coffee cans you can use two loaf pans (like the one seen in the picture). If you use a loaf pan (bigger than a coffee can), cook the pumpkin bread for 45 minutes and then check it. It doesn’t have to be Thanksgiving to make pumpkin bread! It’s such a delicious fall treat! Let me know if you make it and if you have any questions. Happy baking! :)
